My name is Comeka and I'm happy to be a part of this challenge! I love to cook and am getting better and better at keeping my meals balanced and healthy . . . my roadblock is planning. I've found that if I plan ahead, I'm great but if I don't start thinking about dinner until 5PM, I'm so stressed out, it turns one of my favorite 'hobbies' (cooking) into an unpleasant chore. I want to be able to enjoy cooking every day, or at least not ever stressing out about it!

Hi, I am Karla but everyone on SP calls me Nimma or Nims. SOTOBETH I have to agree, I found this challenge and thought *no way Jose* I just do not have the time for this. But like you I have time for TV, to talk on the phone, play computer games, read and more. I got very sick in October 09 and almost died, I have not been able to work since then.

But the truth is I DO HAVE TMIE, I have LOTS OF TIME, I just did not want to make a committment. But I have to do this.

My DR told me 5 weeks ago I needed to go all VEGAN, in the first 3 weeks I gained 7 pounds. So now the plan has gone to Flexitarian so I am able to just eat healthy with more veggies and fruit.

So I am going to JUST DO IT, take this challenge and do something very good for myself.

I look forward to learning all that is here to learn and getting to know all of you in the process.

Got all excited about this challenge, but am going to have to quit for now. I feel so bad, but it just isn't the right time.... My hubby is being very testy about any "cleaning out" or any change that he doesn't initiate right now - so my healthy kitchen makeover has gone down the tubes..... I'll give him a few weeks to simmer down and see what happens. emoticon

I found this challenge and at first wanted to delete, delete, delete! I tell myself I don't have time to plan meals and cook. Funny, I can find time to watch a movie or play computer games. Hmmm? So, I have decided to join this challenge now because I start back to teaching in a week and I want to make time for the healthy cooking and eating that I need to make a priority. I CAN do this!

I'm new to SPARK, but have been planning and cooking our meals for years. Living 22 miles from the nearest regular grocery store, I have to plan at least a week ahead. I use very few processed foods. Mainly, I want to cut down on meat and make my favorite recipes more healthy.

Welcome Linda! I too need to learn to plan better (taking things out to thaw). I did try to make a pact to clean out my freezer but that got sidelined when we got busy, busy. Gotta stop at night and think about the next day's meal from here on out.

Hi, my name is Lidia and I am from Australia. I recently reached my goal weight and now off all medication that I was on for diabeties 2 and cholesterol. My doctor says I have completely reversed my diabeties and my cholesterol is great. I feel so much better about life. I took this challenge as I made a commitment to myself when I first began to lose weight, that this was not a diet but a lifestyle challenge. I have been checking out the recipes on spark and already starting making and packaging some to freeze. Love this challenge!!!

Hello everyone,

I joined this challenge because I need to get back to basics. I have a tendency to put myself in situations where processed or prepared foods that don't have nutritional information are the best and sometimes only options for me--key words being "put myself in situations". I have no one to blame but myself but now's a good time to work on me.

After I read Lex's comments I realized that improved budget and organization skills are extra benefits of completing this challenge. Well, I'm off to plan my menu for the week.

I joined this team nearly a week ago and am only now reading through the first email and seeing what I'm in for, so to speak.

Some of the things you have on here I already do, but others I need to improve on. I need to adjust to a lower income in a couple of weeks, and that means I need to tighten up my shopping list rather than wander into the supermarket and browse the freezer cabinets. Also I am in a terrible rut foodwise and need to shake things up a bit. I only have my 14 yr old and myself to cook for and she is way fussy, so a lot of the meals I plan to create will be meals for one.

We are lucky in that we recently had a lovely new Waitrose (I'm in England) open up a ten minute walk from our house. They have a lovely veggie and fruit section, and plenty of fresh meat and fish, and a lovely cheese counter. They also supply a lot of local in-season produce.

They also have wonderful ready meals that are actually quite wholesome, although a bit high in things like fat so I have to make them an occasional treat. I tend to use them to get an idea of how a particular food item works. Last week, for instance, I bought a chick pea masala, and it was really nice, so now I know I can play with chickpeas and enjoy them. :-)

I am only now starting to browse their selection of beans, pulses and so forth because I need to try and increase my protein intake without increasing the fat/calories. I rarely even make it to the lower advised daily amount of protein (1 day in 7 this last week).

So I hope to gradually improve my eating, budget, and organisation through the coming weeks as a result of following this challenge. It may take me more than a week to get through each week's challenges though. :-)

Hello all! I am now an empty-nester learning to cook for two. My fridge is full of leftovers. *sigh* I like to cook when I'm in the mood, but I am not good at planning meals and I resent being in the middle of a project of some sort and have to stop to fix a meal.

I have more time in the summer since I teach, so I'm hoping to form some better habits. Wish me luck!

Hi everyone. I'm Cheri and I'm the main cook for my family but have been in a rut for a long time now. We have a selection of standard stuff that I make just about every week. None of it is particularly healthy and I'm seriously burned out on eating the same things over and over.

Hi, I'm Billie. I've been on SP for a while but just found this team. I find cooking really hard.

There's 100001 recipes for chicken, so how can I choose just one? And then once I find a recipe I want & have all the ingredients for, I can't figure out the rest of the dishes to make with.

And I never seem to get my cooking times right. If I try to make more than 1 dish, I alway screw something up & end up eating dinner at 10pm.

Hopefully this team will inspire me to be more organized with my cooking.

Because I LOVE to cook and like to think of myself as a gourmet cook I do not want to give up the flavors that we are use to having. I have been working on my recipes to make them healthier. Hi all! I'm Andrea. Like others here, I have been good in the past about cooking healthfully, but in the past several months I have really let that slide. I was in a cooking group this past year, but our ideas of "healthy" were vastly different from one another! My husband and I have committed to eating healthy as a family again, so this challenge is just what I need to get going.

I love to cook, and when I'm being good and consistent, I'm pretty good at meal planning. But I've gotten off track for a while, and I'm trying to get back into my good habits. This seems like a good place to start. I'm always looking for healthy recipes that still taste good, and I'd be happy to share. I find that changing things up, and trying something new, at least once a week, keeps me from getting bored. I read somewhere that the typical American family has about 10 meals that they rotate through regularly ... that's not me!

Hi my name is Krista and I personally love love LOVE to cook, but I have a small kitchen which I believe hinders me from cooking as much as I'd like to (oh, and that whole not having a dishwasher thing, not exactly helping either). But I took some time uot last night and planned my meals for the week! I've been dining out a lot recently and haven't been going to the gym, and wanted to find a way to get back on track. So here I am! :)

My name is Knicki, I've been a vegetarian for over 5 years and I'm not a fan of cooking but since the rest of my family eats meat I'm learning to cook. Mostly I'm taking ingredients that are on hand and throwing them in a pot and spicing it up and then that's dinner. I am a stay at home mom to two kids with several part time jobs. I'm also trying to eat less sodium which is somehow sneaking into my diet even though I never add it to recipes.

Hi, My name is Becky and I love to cook, but time is my challenge. I work way too much and trying to cook healthy meals for the hubby and myself becomes a challenge. Eating out just sabotages my weight loss efforts, so I am hoping this team will have some great rewards for me.

Hi I'm Holly. I'm trying to get out of the cooking rut I'm in. It's just me, so I'm always cooking for one, and I seem to be stuck on dinners of baked chicken or fish, along with some sort of steamed vegetable lately. Healthy, yes, but pretty boring.
