Sorry I have not been here. I started a medical trial in March for asthma and had to go off all my asthma medications for 4 weeks. All I wanted to do is sleep. Strated the new medication on Monday and feeling normal again now.

Kathy - I am so sorry that someone used your name for ER visit. Looks like we all have to keep a close eye on everything now adays.

I just saw on a news show last night about all the information that can be gotten off copy machines. Evidently they all have a hard drive that keeps copies of everything copied and if that isn't wiped clean when copier is resold - all that information is available to goodness knows who. Pretty scary.

I typically buy whatever pasta I can get on sale. The last one I got at Ocean State Job lot for $1.50 and was a corn pasta called Samville's.

My doc wanted to diagnose me with fibromyalgia. I told him to hold off until I'd been gluten-free awhile (because I knew a diagnosis would tag me with a pre-existing condition). Sure enough, almost all my symptoms lessened or disappeared. I've read several articles either linking FM or CFS (chronic fatigue) to gluten or even saying FM and CFS are often misdiagnosed gluten intolerance. A friend of mine is a long time CFS sufferer but refuses to even try going GF for a time.

As for pasta. Everyone raves about Tinkyada but I wasn't that impressed--and around here it's overpriced. I like Trader Joes. Cooks up more like regular pasta and doesn't get soggy. DeBoles tastes more like regular pasta but you can't cook it long or it turns to paste. Someone gave me some DeBoles corn pasta elbows and they make great mac and cheese.

It's good to know about restaurants which are forward looking. I just found out that a restaurant here called Mario's has a GF pizza and pasta dishes.
The guy who answered the phone said he'd tried both thepasta and pizza, and liked the rice pasta so much he was going to use it at home. Has anyone got a fave brand of pasta?
It's been the week from hell for me, and I'm going to order pizza for dinner. I was refused insurance because of fibromyalgia. I just came from the doctor's office. I told her that most of my problems were way better since going GF. She's writing a letter to the insurance company on my behalf. She also said that before diagnosing fibro, she'd suggest people try GF and perhaps no casein.
The dairy free didn't make any difference for me, but the gluten did. Most of my trigger points were not bad. They used to all be inflamed.
Also today I found out that someone has used my name and other info to get medical services. I was called by the hospital to ask why they'd gotten no payment for emergency room services I received on the 31st of Jan. of this year. I've not been in the ER since 1984. It's kind of scary. Tomorrow I have to go and turn in a letter to the billing department disputing the bill. My insurance company (not the one I've applied to) says they have no record of it. So, the thot plickens. Yes, that was deliberate. I love spoonerisms.
I miss reading posts from everyone. Where are you all?

Yeah, I think I'm going to print the menu out for next time. A group I'm in always goes there after their monthly meetings, so I know I'll be going back next September.

I made Glutino's sandwich bread mix yesterday and it came out beautifully. Best bread I've made, and I like the taste. I always proof the yeast, though, so I added a couple tsp of sugar for that. Taste a bit like Sally Lunn bread, if you've ever had that.

I personally eat at Chili's and like it. I printed out a menu at home just in case they couldn't find one. They have always been able to find theirs.

I was told about a local restaurant which has GF pizza and pastas. I went on line, and couldn't find anything about it. It's frustrating, but I'm going to call them and ask.
My friend and I went to a locally owned restaurant. She' got celiac, and the waitress was so nice. One of the soups was GF and the other, a former fave of mine, was not. She was not annoyed when we asked her to check. Needless to say, the soup was delish and we tipped well!

I went to the Chili's by me to check out their gluten-free menu. They did have one to show me, but I didn't try anything yet. Nice to know there is a place I can get a taco.

Went to Chili's yesterday. They said they had a gluten-free menu and I said, "By all means, bring it on." After 10 minutes, they told me they couldn't find "it" but they could print off another copy. After another 5 minutes the manager said the printer wasn't working. He was going to call to another Chili's in the area. I made him hold still long enough to answer some simple questions about one of the salads and I got that. Can you believe this crap?

I have had the Vann's waffles before, but not the blueberry. I don't tend to like them; I guess I've had too many artificial stuff which I can't stand.
Yesterday I went to a local restaurant with a friend, and they were very nice about checking to see if a soup had gluten. One did and one did not. So we had the soup, cheese and fruit option. It pays to ask. If a wait staff person is rude about it, then I don't go back.
Then I was told by a priest friend that a local restaurant nearby, known for its Italian cuisine is now serving some gluten free items. It's the 3rd Italian place in town.
I must say that I am finding it easier to do without wheat. But, any suggestions for making breaded or battered fish? My guys love it, and I'd like to oblige.

I like the Trader Joe's waffles, too, Nancy. My store was out last time I was there, so I was sad. I did not like the Pamela's bread mix; it was sort of edible when toasted, but it tastes slimy to me. It did rise, though, more than I thought it would.
Costco has started carrying a gluten free cracker which is far above the plain rice thins, which they also have. It's a whole grain with flax and quinoa seeds and they really taste okay!
I worked in a stand for a baseball game (AAA franchise) last night, and there was a birthday cake for one of my best friends as well as fantastic chocolate chip cookies. I did not cheat!
I've also discovered that one can pack a good veggie punch in risotto, which my whole family likes. You can make it a meal in itself, too.

I brought home my first post-Lent box of Van's waffles this week. The box said "Now with more blueberries!" Oh boy oh boy!

When I opened them, they had no blueberries at all. Just a few vague blue dots like someone had accidentally spattered them with blueberry juice.

Not amused.

Hi to new members. Donna, the scones were from the Gluten Free Pantry and they were super. I used dried cherries in them, and they worked out. I also made mini muffins from the Betty Crocker yellow cake. I used mini chocolate chips-about a cup, and about 1/3 cut of chopped, candied ginger. They were voted as awesome by our GF guests.
My bread attempts aren't as successful though. I sometimes just want to eat whatever is easy and that's not good. I did cheat a bit last night, but not much. No major problems, but that'll be the last time for a while.

The muffin/scone mix is Glutino's Gluten-Free Pantry. I've made the muffins. Not bad at all. Actually reminded me of the muffins my mom used to make.

I used their French bread mix for Easter bread. Last time I made it nothing went right--yeast didn't proof well, dough was too dry, then too sticky when I added water, then took forever to rise, but it baked beautifully. this time everything went right, but it baked liked a brick. Arrrgh! Slices aren't bad for a pizza crust though.

Good Morning All,

I don't know why I haven't stopped by this daily chat and gotten to know some of you more. I sure could use the continued support of being gluten-free. Maybe I would cheat less often.

Kathy - what brand is that scone mix? I realkly struggle at breakfast time. Maybe that would help.

Donna - I would love thst cake mix recipe. Is it on this site?

I ended up not going to Denver, so didn't have to worry about the food issue.
We make special food for Easter, but I can't eat it. Fortunately, I can work with wheat, even if I can't eat it. I make a very rich Easter bread, made with butter, eggs and whole milk. It's a lot like Challah, but it's round and decorated with a cross on top.
I tried the Pamela's bread mix, and wasn't overly impressed. But the Gluten Free Pantry scone and muffin mix turned out great scones. They were voted as delicious by my non GF guys.
I still really miss good bread.

If you got sick after only 3 hours, it probably wasn't food poisoning. That usually takes at least a day.

My husband and I are going to be in Denver/Longmont Co. next week. Anyone know safe places to eat? We are staying in a suite hotel, where his sales meeting is being held, so I can bring some food with me. But I know we'll be meeting some folks for a couple of meals.
Yesterday I went to a restaurant with a huge gluten free menu. The owner has celiac, and loves his Italian food. Well, I didn't want anything too heavy, so I had a seafood rissoto. I don't know if I got the stomach bug my son had the day before, but about three hours after we left I got soooo ill. The seafood tasted very fresh, and my husband had a pasta meal. He's got something, too. The sad thing is that the food was really good, but I don't want to go back there. Sigh!

I went to our local Whole Foods yesterday and was appalled to see they now decided that stocking by brands was more important that separating out gluten-free from the wheat chafe. But when I asked where their gluten-free foods were, they pointed to the same shelves, showing that they have no clue. I just wrote to the store manager, giving him a lecture on contamination, and on the dangers of putting wheat crackers under a sign for gluten-free products.

Last time I went to Olive Garden was 15 years ago and all I could eat was a salad. It is good that they have something now that is gluten free. To bad it was not that good.

I went to Olive Garden back in the fall. They had one pasta entry, but I wasn't sure how it was cooked. I'd read on a blog somewhere that they just used the regular pasta water for it. So, I had their salmon. It was okay, but a bit dry. Also, they brought me a huge bowl of salad with no croutons. I was impressed by how helpful they were.
Next week is our anniversary, so I am hoping it won't be so crowded at Paisano's then.

I would love to find a good Gluten Free Italian Restaurant. That is one thing that I truely miss. I can make it here at home but it is never as good as what I can get in a restaurant. I have heard about Cheeseburger Paradise. I know they are expanding so I hope on comes to our region.

There is a restaurant here which is Italian, and has a full GF menu. The owner was diagnosed with celiac, and said he wouldn't stop eating his food of heritage. So, he researched and now you can get most dishes GF.
I've been wanting to try it for months. Saturday, we went there, but the line was out the door! It's got regular GF food as well, and I guess is really good! I was disappointed. Well, our anniversary is just over a week away, so i can hope!

The Extreme Pizza restaurant on my way home from work now carries gf pizza crust. The only problem is that you can't order a regular combo pizza using the gf crust. You have to order each item individually so a fully loaded pizza can get pretty expensive.

The good news is that they ALWAYS keep their gf products in a separate area, use a separate area for preparation and such so I feel the risk of contamination is low. They use the same oven but, since the pizza never touches any part of the oven, just the pizza pan, I feel it's fairly safe.

The manager was really excited to explain all of the rules put in place to insure prevention of contamination from gluten. He sounded like he has been around someone with a gluten sensitivity because he was really aware of the details of staying gf.

I was out to eat twice this weekend, which never happens when I'm at home! At the first restaurant, they know us well, and are very good about telling me what was okay. Thw 2nd place is a local chain, known for its service, and for the first time, they had the GF items listed!
Why is it that potatoes such as hash browns have wheat? Is it really necessary? Also, the sweet potato fries which come with a lot of items at some of our local restaurants are not GF. I had a waitress tell me they were. I asked her to please check, and they were not okay! I was polite, but insistent. Slowly but surely, it's happening.

Isn't is wonderful when we go some where and someone has GF food that we can eat. YEA At our church there is now 2 people who bring GF because they know I can have G. Bless them.

Went to a lunchion for the Choir Members yesterday. We have two members who are leaving us and moving to Vermont. We will all miss them. The host cooked both Gluten Free pasta and regular pasta. Turns out his father is also gluten free so he knew exactly what to do. It was wonderful to be able to eat without worrying about what I was eating.

A friend gave me a bag of Aleia's Almond Horn cookies yesterday. They're yummy. Reminds me of Italian almond cookies we used to get at weddings when I was a kid.

Fish chowder - make Chiopini (sp). I used to have that in a nice resturant in Morro Bay when I lived there. It was so good. Really you can make it any way you want and with any kind of fish or shell fish.

No, lentils are out. I used to eat them, and had awful reactions. I found out they are similar to peanuts, which are a complete no. I've also overdone corn lately, so that's out. I'm searching for a fish and veg chowder. I may make one up if I read a few recipes and decide none is quite what I want. I'm blessed with the ability to usually tell what will make good companions in a recipe. A few major flops, but mostly in the GF baking.
I wish I could eat lentils. Pared with brown rice, they're incredible!

Can you have lentils. They usually are easier to digest then most legumes. I also make corn chowder. I good vegetable soup is nice also.

You've just reminded me that I've got a corn chowder recipe I can make for Lent. Maybe I'll make it this weekend. I'll put it under shared recipes.

I love Thai food, hot and not hot. I imagine it has coconut milk? Can you post them in the shared recipes? Also, I'm thinking of a fish chowder if I can find a good one.
Blessings to all. BTW, the Trader Joe's brownie mix is a bit grainy, but I like them. My critical son said the batter was better than the cooked product.

Thanks for the welcome!

I love soups! 2 of my non-meat favorite soups are from a Weight Watchers cookbook, one is called
Thai Coconut-Vegetable Soup. Even if you don't like coconut, honestly, you can't tell it's in there. It is also NOT SPICY contrary to being called Thai. It has mushrooms, carrots, pepper, tomato, green pepper, cilantro and is in vegetable broth. It does call for fish sauce and no...it's not fishy tasting either (the soup) Also....Miso soup, which has bok choy, pepper, mushrooms, both are very delicious. I have made both and shared with family/friends and it has went over well. If either sound good I will post recipe

Welcome, Angie. It's always good to have new folks here. I've been on this road since the end of July, and feel much better. I can't say I LIKE GF bread, but I've found some that's not too bad.
Anyone out there got any good ideas for a meat free soup for a Lenten supper? I can't eat many legumes, so there goes the bean soup idea. I have to bring soup twice this Lent, so I'd better get some ideas. As it's the only one I'll likely be able to eat, I'd like to have some protein in it.

Hey everyone :) I am new here. 6 days now GF and actually liking it. I did have a dangerous bread LOAF (white bread, WHEAT )Craving yesterday where I got very mean inside so it was good it was a weekday and nobody was home and in danger :) I got some GF bread and boy was that a treat.

I want to be more active here with others so thought I would stop by for chit chatter :)

Glutenous rice flour is called that because it is sticky, not because it contains gluten. It is safe to eat. It is also called sweet rice flour.
