I made healthy salmon patties tonight using oat bran instead of cracker or bread crumbs. I'd never had salmon patties so I can't compare but I would make these again.

Homemade salsas and dips are so much better! Chopped up veggies, beans, etc. YUM. Try some of the recipes at Savvy Vegetarian. They have some great stuff there.

A weight watchers Pad Thai recipe. Yum!

Last night I made Indian Style Salmon from the Sainsburys magazine. It was really good. I roasted sweet potato, red onion and cherry tomatoes in a little olive for 30 minutes, then I mixed in some chick peas and mild curry powder and put the salmon on top of it all and roasted it for another 10 minutes until the fish was cooked through. It turned out really well and my little lad loved the salmon, he ate an entire fillet of it to himself and he even tried the sweet potato which until now has been his arch enemy!

this week i tried 2 new recipes..

last night i baked salmon, brown rice, corn, and some spices in my casserole dish. as i love all of these ingredients, the dish came out good too. :)

sunday i baked brownies with walnuts and wheat germ. delish!

My husband and I love Mexican and we both started our new, healthy diets Jan. 3, so I came up with a healthier taco for us...
1 blue corn shell
1/4 cup rinsed black beans
1/4 sliced avocado
2 TB. home canned salsa
1 TB. shredded cheese
They were great - next time I will add some garlic and onion to the black beans.

This week I tried a new way to cook my pork loin. I peeled, quatered potatoes, carrots and onions, coated them with olive oil,and italian seasoning. I then seasoned my pork loin the same way and raosted them in the oven. We had no leftovers that night and was ask to make sure and make more vegetables the next time.

I made the SP Chicken Asparagus and Pasta. It was really good, I added more spices to give is some zip. The recipe makes a lot, so I had leftovers for the next few days. It's really good served cold as a side too.

I bought one of those low calorie recipe pamphlets that they sell at the check out counters in all grocery stores. I don't know what healthy cooking is, so I made the decision to try one new recipe a week. I tried 285 calorie low fat garlic roasted potatoes, a new green bean dish and chicken breasts seasoned with McCormicks Hawaiian grillmates. The entire meal was less than 500 calories.

I have made this once before when the magazine came out but I am going to do it again...the Self "Cook once, eat healthy all week" menu. It will cover lunches for my boyfriend and me all week long.

sunday i baked a cake: super chocolaty cake..

i'm not a baker so i'm not sure what mistake i made - but somehow there wasn't much batter and my cakes seemed very flat. oddly since sunday it seems to have grown a bit. weird. still delicious though! :)

New salad dressing: Thyme-Dijon Mustard Dressing

In a jar with tight fitting lid combine 1/4 cup olive oil, 1/4 cup balsamic vinegar, 1/2 t. dried thyme, 1 t. dijon mustard, then shake, shake, shake!

For part of my New Year's Day Dinner I made black-eyed pea gumbo as a side. Peas, onion, celery, garlic, tomatoes. I added a couple of hot peppers and a dash of tumeric. Served over brown rice...yummy. Today, the leftover gumbo will be lunch.

wasn't a new recipe, but a quick, easy and delicious one.. today i made blueberry muffins, but the recipe called for a mashed banana, orange juice, applesauce, whole wheat flour, wheat germ to name a few. it was so quick to make, and at the end i strayed from the recipe and sprinkled some powdered sugar on there.. they were so good and only 132 calories/2g of fat.

the best part - is that i had 2 and they were surprisingly very filling! and even better than that.. i had all of those ingredients in my home. well all but the oj - we finished that yesterday.. but my fiancee was nice enough to go out and get some. :) delicious! and fruity!

I made the winter lentil soup and it was awesome and super easy -- leeks (sauteed in a bit of oil) , diced canned tomatoes, sweet potatoes, water, lentils, salt , Pepper and thyme with greens (I used collards) added in for the last ten minutes -- super yummy!!

Moroccan Couscous (from The Kind Diet). Absolutely DELICIOUS!!!


Ingredients
2 cups peeled butternut squash, cut into 1/2" cubes
2 cups yellow onion, large dice
1 1/2 cups carrots, cut into 1/2" cubes
1 1/2 cups zucchini, cut into 3/4" cubes
2 tabespoons olive oil
fine sea salt
1 1/2 teaspoons freshly ground black pepper
1 1/2 cups vegetable broth
2 tablespoons Earth Balance butter
1/4 teaspoon ground cumin
1/2 teaspoon saffron threads
1 1/2 cups whole wheat couscous
2 scallions, white and green parts, chopped


Directions

Preheat oven to 375 F. Place the squash, onion, carrots, and zucchini on a baking sheet and toss with the olive oil, 1 teaspoon salt, and 1 teaspoon pepper. Roast for 25 to 30 minutes, turning once with a spatula midway through.

While the veggies roast, bring the broth to a boil in a saucepan. Remove the pan from the heat, and stir in the butter, remaining 1/2 teaspoon pepper, cumin, saffron, and salt to taste. Cover the pan and steep for 15 minutes.

Scrape the roasted veggies and their juices into a large bowl, and add the couscous. Bring the broth back to a boil, and pour over the couscous mixture all at once. Cover tightly with a plate and allow to stand for 15 minutes. Add the scallions, toss the couscous and vegetables with a fork, and serve.

I tried a new replacement "pizza" recepie this week.

It was a flatout wrap w/ a wedge of laughing cow light garlic and herb spread. Sliced zucchini and red onion and a little bit of asiago cheese. It was So good!! The laughing cow chese made it sooo creamy and good!

Also made "quick pesole" with home made whole wheat fiesta tortilla chips. It was spicy and the chips were great!

Because I enjoy fruits and vegetables so much, I am always looking for new recipes. This week I made a carrot/pineapple salad. I simply combined grated carrot, drained crushed pineapple, raisins, finely chopped dates, and some flaked/shredded coconut (I used unsweetened). I have also made a similar salad using chopped mango in place of the pineapple.

I tried a recipe for Breakfast Cookies. It was posted by CoffeeBeans here on SP. I swapped out dried cranberries for raisins and dried apples for dried apricot. They tasted pretty good. Quick and easy to grab in the morning with a banana. I am horrible about eating breakfast.

I made pan-crisped tofu with greens & peanut dressing last night. It was easy to make and actually delicious. The portion size given in the recipe was too small for me so I ate 1 1/2 portions, but it still worked out to be a healthy meal. Even my husband liked it! emoticon

I tried a new recipe for spaghetti with olive oil and garlic from Cooking Light. I think I was a bit heavy handed with the crushed red pepper. Next time I'll be a bit more careful. However it did assure I drank all the water I needed to yesterday.
