This recipe is seriously insanely delicious! Even my guy friend who loves his meat and carbs and seldom does "healthy" or even gravy thought this was so good and went back for seconds! I like to have it over cauliflower and add a protein, last Sunday I paired it with some rosemary chicken I cooked in the crockpot. I used less oil in the gravy so I could use some with the chicken. Also I usually use water instead of veggie broth, and only 1 tbsp of the nutritional yeast (but you probably don't even need to add any if that's not a food you use, it's great even without it). Let me know if you try it!

Mushroom Gravy
2 oz Veggies | 1 Fat
Prep Time: 20 minutes

Ingredients:
2 cups mushrooms, diced 6 oz
1 cup onion, diced 6 oz
4 Tbsp olive oil
6 cloves garlic minced
1 Tbsp dried rosemary
1 Tbsp dried thyme
1 cups vegetable broth
cup red wine optional, sub vegetable broth
2 Tbsp nutritional yeast
2 Tbsp soy sauce or tamari (gf)
1 Tbsp arrowroot powder

1. Heat the oil in a skillet over medium heat.
2. Add the onions, mushrooms, and garlic, cook for about 10 min, or until well browned.
3. Stir in the herbs and a large pinch of salt and pepper.
4. If using wine, add it, stir for a minute, and then add the broth.
5. Stir the arrowroot powder, soy sauce, and nutritional yeast together in a small bowl to make a paste.
6. Stir into the pan, and simmer for a few minutes to thicken.
7. Divide gravy into 4 servings. Each serving contains 1 BLE fat serving and 2 oz of veggies
