I like celery in some of my recipes but do not every use enough for a whole stalk. I was purchasing the precut and that was really expensive. As I like making soups, stews etc. I now purchase a stalk, use what I need for that week. I cut clean and cut the rest according to us. Some in 2 to 3 inch pieces and some in small a=quarter inch. I put them on a cook sheet and in the freezer. When frozen I take out and put in a couple of zip lot bags to be used when needed. This saves me money and waste.

One of my quick Recipes for an easy dinner when I am pushed. I keep chopped bell peppers and onions and celery for quick meals.in the freezer as most of the time they are larger than I am using for my recipe or I get a great buy on them

I package coleslaw mix with cabbage and carrots
About half cup frozen chopped onion and bell pepper ea.
Tablespoon olive oil.
1 Polish or Kielbasa sausage sliced
1 can diced tomatoes
salt, pepper, crushed red peppers

Heat oil in plan, add coleslaw mixture, salute until it has a little color
Add onion and pepper,
put in tomatoes and salt pepper and rushed red peppers to taste
Add sausage

Cover and simmer for at least and hour until all is blended. If you need any additional moisture, I will add a little chicken or beef broth as I usually have one of them open in the fridge.

Serve with a corn muffin on the side
