Yesterday I had Brussels sprouts, three bean salad w/ pickled veggies, mixed roasted veggies, and minestrone soup and vegetarian vegetable soup during the day.

This morning I already ate more Brussels sprouts, kidney beans with diced green peppers, and 4 cheese Mac n cheese (a treat!). So getting in my veggies!

I had to eat a lot of softer foods (like soup) for a few days after I had a tooth pulled. 😬 Trying to stay on that kick to kickstart more weight loss and easily get in my veggies with lighter fare. 🙌🏼

2019 is our year! ;)

Today is a salad day with lots of tomatoes, carrots, onion, a few sliced black olives and feta cheese. Yum!

We got a spiralizer/slicer/shredder and loaded up on up on vegetables last week. It makes it much easier to prepare salads, stir fry and soups when the ingredients are in the fridge ready to go.

1/2 lunch plate usually veggies, and sometimes dinner also. Brussel sprouts for lunch, and lima beans for dinner today. Tomato wedges & banana peppers also.

I didn't do too well getting them in last week, but doing much better this week even while on vacation. We planned our meals accordingly. Vegetables are easier than fruit.

I get my added veggies when I make scrambled eggs with veggies, homemade vegetable soup or a big pan of roasted veggies or stir fry.leftover roasted veggies are great in scrambled eggs

One of the ways I get in my 5-7 freggies is my vegetable white omelet. I start with 1 teaspoon of olive oil, add chopped onions, chopped zucchini, chopped carrots and after a few minutes, I add 2 big handfuls of baby spinach. I cover until wilted, then pour 3 beaten egg whites and 2 tablespoons shredded low-fat mozzarella cheese. I cover the pan and leave on low for about 5 minutes. It comes out puffy and filled with delicious veggies. Have a side of grapefruit and you've got yourself 4 freggies to start the day.

That brief span of a mere second between 11:59 PM 5/3, and 12:00 AM 5/4, is exactly the halfway point of this Spring Challenge.
We are at the half, my Friends! emoticon
Is half the battle won? emoticon
Have you reached half your goals for this challenge? emoticon
Do you make half your plate Freggies? emoticon
I once had a client who's 3 year old refused to eat green beans until I covered them in a white creamy, (low fat), sauce. That child associated the sauce with ice cream and ate every bean. emoticon
Another time I had a client who's son had yet to utter a word and was a really picky eater at age 2. I spread a cracker with some peanut butter and put a bright red ripe strawberry on it. "Strawberry", the boy said and reached for the cracker. That mother had been trying to get her son to eat strawberry jam for a while but he wouldn't touch it. His first spoken word taught her, (and me), a valuable lesson about feeding her child. emoticon
I love veggies but am not a great fruit eater. Thank God for smoothies! What are some ways you get your 5-9 a day?
