I made a healthier version of my mother's chicken enchilada's by using turkey, 2% milk cheese, brown rice, fat free tortillas, and healthy cream of chicken soup. They were a bit dry and needed more herbs...made notes and will try again.

Thanks for reminding me LOL

This week I tried another muffin recipe,
because I was trying to use up some bananas.

My recipe for this week was Chef Meg's Blueberry Flaxseed Muffins.

All I can say is ... YUMMO!

Delicious, healthy, guiltfree, what more can you ask from a recipe!

I just got my SparkPeople Cookbook.

I also got a new diabetic crockpot recipe book

I want to try some new recipes.
