Buying Cabbage

Look for: cabbage heads with shiny, compact leaves that are heavy for their size and free of blemishes.

Avoid: cabbage heads that have leaf damage. Also avoid cabbage heads that are light for their size.

Seasonality: Late fall and winter

Storing Cabbage

Refrigerate up to seven days in an airtight plastic bag. If you store a half-head or wedge, cover it tightly with plastic wrap and use within two days.

Preparing Cabbage

Remove the outer leaves and cut the cabbage into pieces, then wash well under running water. Cut  cabbage into wedges or slices as desired. Remove and discard the tough inner core.
