Buying Leeks

Look for: leeks that have as much white and light green as possible. Stalks should be crisp and firm. Select smaller leeks for the best taste.

Avoid: leek stalks that are withered or have yellowed tops. Avoid those that are mostly dark green.

Seasonality: Fall to early winter

Storing Leeks

Store unwashed leeks in a plastic bag in the refrigerator up to two weeks.

Preparing Leeks

Leeks are grow in sandy soil. To remove all the dirt, slice then wash them. Cut off the root end, then slice the leek in half vertically. Chop and place in a bowl of cold water. Agitate the leeks well, then drain and use.
