Buying Parsnips

Look for: parsnips that are firm and 5 to 10 inches in length.

Avoid: parsnips that are large or have soft or dark spots.

Seasonality: All year; peak season fall and winter

Storing Parsnips

Wrap unwashed parsnips in a paper towel and place in a plastic bag. Refrigerate up to 2 weeks. Refrigerate cooked parsnips up to 3 days.

Preparing Parsnips

Wash in cold water and cut off both ends. Trim any major rootlets or knobs before cooking.
