Taken April 3, 2014. 43 pounds, give or take a few, to lose.So far this morning but I'm about to head out for a five hour shift and during the shift I should at least reach my goal. Happy Wednesday!A smidge over my step goal but under on active minutes. Jog around the complex, here I come!!Eggs lightly fried in a bit of coconut oil, raw asparagus, and tomatoes - a quick dinner after an exhausting shift at work.Shhh, our day hasn't quite started yet. Soon. ;-)Thursday, I'm ready for you! Breakfast before a walk then work - crustless broccoli quiche, local bacon, and cherry tomatoes. Thanks, 11 hour work shift!!A week of long work shifts doesn't necessarily mean junk food to the rescue. A bit of time and effort and I have: baked cabbage, onions, and beef brats, a huge salad, and a crustless asparagus quiche.Oh my goodness, one of the best crustless quiches I've made! I decided not to use asparagus and opted for a small amount of fake bacon and extra cheese. Easy and amaaaazing!Not too shabby for a day that included a short work shift and quite a bit of relaxation. :-)I'm having a foot problem that makes resting between work shifts important. I really dislike the decrease in the number of steps I get most days so this morning I'm trying to get in a few extra while watching "Turn". Shhhhh, don't tell!Happy Saturday! Headed out for a great day at work :-)My treat for this week - a sample cup of a Starbucks Birthday Cake Frappuccino. I don't even like Frappuccinos but oh wow, this was delicious! Not my best day but certainly not my worst. And now it's time for a rest before getting up early for work. :-)I hoped for a better day but I've been up since 3 AM and am exhausted. Maybe tomorrow. I can do this! :-)Caramelizing onion and garlic for a pot of delicious soup. Mmmmm!Apparently my long day wore him out! Here I am writing in my Passion Planner and there he is sleeping with his leg on my pillow. I hope everyone has a marvelous week!Sunday and Monday I was dealing with a dental issue and didn't do a lot. I made up for that today! Delicious dinner of low carb blueberry and walnut pancakes. Easy to make and so very filling! I made extra for breakfast in the morning. :-)This is what happens when I have a long-ish and busy shift. Love it!!!This barley vegetable soup I made today isn't the prettiest soup I've ever created but it is absolutely delicious! I made enough for several lunches and a couple of dinners.Deliciously simple dish of beef, carrots, onion, asparagus, garlic, and a small amount of broth. Great for a quick meal and travels and freezes well. Not my best day but one of my better ones! Wooohooo!Not enough active minutes for the day but I'll take those steps! I worked a seven hour shift and now it's time for me to relax a little bit. :-)Part of my weekly meal prep is roasting a dutch oven full of vegetables. Behold! Zucchini, yellow squash, potato, onion, carrot, little tomatoes, mushroom, and sugar snap peas. Who needs a hamburger and french fries with this deliciousness waiting at home?I should be sleeping but can't because my stomach was growling too much. I wanted something bad for me but opted for a bowl of steamed green beans, a few cherry tomatoes, and a few minutes of reading. Every good choice counts!Another of my one pot favorites - cabbage with crumbles, tomato, and spices. It tastes like cabbage rolls but is much lower in carbs! Between this and the vegetables I roasted a couple of days ago I'm set for this week. :-)My insulin pump failed last night in the middle of the night and I woke up with ridiculously high blood sugar this morning. Because of that, I haven't felt well today so I haven't gotten many steps in but I've made sure to eat well. Tonight's dinner is raw zoodles with raw carrots and bell peppers drizzled with a bit of Italian dressing and topped with a bit of parmesan. Easy and healthy for what ails ya'!!Tonight's dinner - a lightened up version of one of my favorite dishes, Pasta del Sol. Heavens, it's delicious!Not my best day but I met my goal and then some. :-)One of my all-time favorite dishes - Mimi's sticky chicken. Since I don't eat meat very often, this is a real treat! I'm off work today and doing a little bit of cooking for the week before I head to my mothers house to prepare lunch for her. This chicken, served with salad and vegetables, will give me several meals. If you've never had sticky chicken, you really, really need to try it. I don't buy rotisserie chicken because I have this. :-)I haven't been around much because I had a death in my immediate family. I'm now getting back on track and here's tonight's snack - delicious grape tomatoes. Yum! I love these so much I could eat the entire container in one sitting but I don't. ;-)
