Pumpkin Protein Pancakes with Almond Banana Cream Sauce and Berries

Decadent…… Check
Clean, Healthy, 1 serving of fruit, 1/2 serving of whole grains, lean protein…… Check (wait what!?!)

I know it’s too good to be true that the amazing deliciousness above can be good for you too so without further ado I present my absolute favorite weekend breakfast. Healthy and amazing with a balance of whole grains, healthy fat, and protein to keep you full and satisfied. No sugar crashes here :)

(Don’t be alarmed by the longish ingredient list/ directions. This recipe is so so so so so simple and comes together in about 15 minutes. There are tons of options to suit everyone too.)

Pumpkin Protein Pancakes with Almond Banana Cream Sauce and Berries
Serves 1 (Recipe can easily be multiplied for more!)

Pumpkin Protein Pancakes
• 1/4 cup old fashioned oats (instant should work fine too)
• 2 egg whites (or equivalent from a carton)
• 1/4 heaping cup pure canned pumpkin
• 1 serving of unsweetened brown rice protein powder (this is optional but I always add it, you can use another clean protein powder if you choose but a serving of brown rice protein powder tends to equal about 1/2 serving of other kinds so I would use maybe 1/2 a serving of the amount that gives 10-12g protein to keep the ingredient ratios the same)
• 1/2 tbsp carob (optional)
• Cinnamon to taste
• 1 tsp vanilla

Combine all the ingredients in a bowl and mix well. You want the egg whites to coat everything evenly so you don’t get egg chunks in your pancakes. Heat a sprayed skillet over medium heat (I use 7 out of 10) and divide batter into three pancakes. They don’t spread like normal pancakes so you kind of have to help them a little. Once the bottoms are solid enough to flip, turn them over and you can flatten them all the way with the spatula. Then cook like normal pancakes. They should be browned on the outside and taste better a little bit more on the well done side.

Almond Banana Cream Sauce
• 1/2 tbsp natural almond butter (natural PB should work just fine if you like that)
• 1 tbsp almond milk (or any other milk of choice)
• Cinnamon to taste
• Chunk of banana (about a third of a medium maybe) I just use about 25g
• Maple Flavor (optional- I would leave out if you cannot find a natural product, I got one at Whole Foods, most I have seen do not have a great ingredient list although it is small amounts if you really want it. Honestly I don’t know how much you really taste it)

Blend all ingredients until creamy. I use the mini chopper attachment for my hand blender. It’s easier to blend together if you spread the AB on the banana first so it doesn’t stick to the sides. I imagine you could easily use a regular blender too. If clean up isn’t your thing try heating the ingredients and whisking them together, it will probably be chunkier but should still be good. Even easier is just to spread on some natural almond butter although I highly recommend the sauce, it is so worth it!

Side note: The Almond Banana Cream Sauce is also fantastic on any kind of cut up fruit, oatmeal, clean ice cream, or anything else you might want an almond butter topping on.

• 1/2 cup frozen mixed berries or berries of choice (I used a blend of raspberries, blueberries, and marionberries from Costco). I’m sure you could also use fresh but I like the way the juices run from the frozen and they are cheaper.

Microwave berries in a glass bowl for 1-2 minutes until warm and soft. The juices should be running.

Top pancakes with almond sauce, then berries. Serve and Enjoy!!

Nutrition: You are looking at about 325 calories, with around 40g carbs from whole grains and fruit, with 7 grams of good for you and filling fat, and a whopping 27g of lean protein. In addition you are getting over a whole serving of fruit and 11g of fiber to fill you up!

    Ok, I think I have edited out the offending ratios, most interesting is that for things liek the oats and pumpkin you are getting 1/2 of 1/2 instead of 1/4 like it says on mine! I didn't have any problem viewing (I use the latest firefox) but changed it in case anyone else was having a problem too. I would recommend updating your internet browsers.

    Made it this morning! When I brought Scott his plate he said "hey, looks just like the picture" (except I only used blueberries). He (GScottC) even named his blog "Porn for Breakfast".

    It is FANTASTIC! As I was making it, I was thinking it would be great as oatmeal too! Or even a smoothie! We couldn't find any brown rice protein in town (or any other unsweetened variety for that matter) so I used a vanilla whey but it still came in under 400 calories so I was pleased.

    Snacky- Yup Oatmeal! I have made the EXACT same recipe in oatmeal form too, it's delicious, filling, and warm but there is something I love about pancakes! I just cooked together the pancake ingredients except the pumpkin and then stirred in the pumpkin at the end and used the same toppings.

    Looks yummy!!! I make something similar but in oatmeal form..... oats, vanilla protein powder, pumpkin, berries, with a drizzle of natty peanut butter on top with a dash or two of cinnamon. I'm definitely going to try your recipe... Thanks for posting.

    Just bought some almond butter with flax seeds and sesame seeds from Trader Joe'syesterday. When I tried a teaspoonful this morning I found I didn't like the flax seeds--I was picking them out of my teeth for half the morning. Yuck! But the idea of blending it with a banana to have over fruit--now you're talking!

    BTW--another way to "de-fat" pancakes is to skip eggs and oil with whatever mix you use, add 6 oz. of plain nonfat (or flavored, if you like) yogurt, and the amount of milk called for on the box. This amount is for the usual 1 cup of pancake mix. These pancakes are light as a feather.
