So far so good this week. I feel like I'm on track to make my goals.
I'm doing ok on the water. I've read different schools of thought on it.. the 1st of which everything is counted as water (including coffee/juices, but not soda). The 2nd is where only water is counted as water. If I do the 1st I'm ok on water, the 2nd I come about 2 cups short. I'm trying though!!! I do not drink soda, or if I do its rare, so I'm not missing out on water because of something else.
We had some yucky wet weather earlier this week so I'm hoping to jog later today. Its supposed to be decent weather, mid-40's and little to no wind. I like that type of weather. The other day it was windy and that isn't always fun. I'm doing good on Sparkpeople's weight training workouts also.
I'm down a few lbs from the weekend but I didn't bother updating Sparkpeople. I was up a few from eating Chinese food so basically I've lost what I was retaining. I really do like chinese food and I usually pick healthier, veggie filled options, but it makes me retain water something awful!
For Christmas I got the book Cook This/Not That and I really like it. There is a recipe for Chinese Fried Rice which is really easy and my son really likes it. Its a pretty easy throw together dish and if you do some prep work ahead of time actual assembly and cooking is quick. I don't have exact amounts since I don't have the book near me but basic idea is:
Saute in oil (small amount) onion/garlic/ginger - I haven't made it with ginger because I don't have fresh on hand right now.
After a few minutes throw in veggies - carrots diced, zucchini, broccoli, mushrooms (whatever you like)
After a few minutes - add meat...chicken, shrimp, etc. (I pre-cook the chicken)
A few minutes later add brown rice and lite soy sauce
Make a well in the center, add 2 lightly beaten eggs, cook through
Its really easy to make, quite healthy with the brown rice and all the veggies. I even added water chestnuts the other night. I really love those things.
