Goal of the day - make mayonnaise.

I am on a 30 day paleo challenge with my Crossfit group. I have really been craving egg and chicken salad, but after reading the list of ingredients on the mayonnaise jar, that was out. After googling paleo mayonnaise, I was amazed at just how easy it was. Egg, lemon juice, mustard & oil. The best part was I have an immersion hand blender that I picked up at a garage sale for $1 that made this a snap.
