Eating more veggies and fruits

So , I've set this new goal to eat 6 to 8 fruits and veggies daily. I made it a point to have at least 2 per meal and sometimes 3 or 4, well its working out better than the 3 exercise vidios daily, I think cause I'm on my feet all day at work that I just dont have the energy or incentive to workout as often as I should, however I do get my steps in most days, over 10.000 usually.
Well this week I made mac and cheese with butternut squash and roasted onion and carrots , I pureed them with 1% milk till smooth and then blended it into the cheese sauce made with 12 oz. mixed cheddar and smokey swiss. Sounds like a lot of cheese , but only 1 and 1/2 oz. per serving . I get 8 delicious servings from a .lb of elbow macaroni. My family couldn't even tell the veggies were in it and I served it with green beans and more carrots so we got 4 veggie servings in the meal , oh and I did put lil smokies in the dish too! I also enjoy at least 2 or 3 fruits at breakfast and the same at lunch so its quite simple to get the 6 or 8 in daily and very filling too.I always meet or go over my 25 grams of fiber per day and have cut my fat considerably. Well when I weigh in tommorrow I hope this has given me a push in the weight loss goal for the first half of Dec. I'll be content with 1or 2 lbs. lost and then to make it through Christmas will be the real challenge. Another day another decision to eat healthier . By george I think im getting the hang of it!
