Day #241 here in Spark Villa

emoticon Today starts my Adventures in Self Care!

I've really learned a lot about self care from Audre Lorde

Yes I am still doing my challenges which are adventures also:

#1-Declutter my home in a year from pinterest. My mission clean the dining room table and it really needs it.
#2-Fit Food. Today I am to give my kitchen a make over. To be honest I did that as I put away my food yesterday-I cleaned, I threw, I rearranged.

72 more days until winter break for my son. I am so busy working on my, it's getting harder to think about Christmas. I don't want to stop and think what to get anyone for Christmas-lol. Yesterday I did get a Acorn Squash. I used a recipe on here. I poked 4 holes in it, poked 4 holes in it and put it in the micro for 8-10 minutes. I cut it in half and removed the skin. Added 1 T brown sugar and 1 T butter and covered it. Micro for another 6-8 minutes. I took off the skin and mashed it up. I liked the texture just a bit bladed. I am making spaghetti tonight Next time I make spaghetti I would love to use spaghetti squash. Can anyone tell me how to fix it in the microwave and etc? For my Fall Fun, I am wearing my Fall shirt today.

    I don't have a recipe.....but I do my spaghetti squash by poking it with a big fork and place it in a
    casserole dish with maybe 1/2 inch of water. They are all different sizes so you just cook it for a
    while and check it to see if it soft. I cook it on high in the microwave.


    If you have the strength to cut it in half - do so length wise, place it with the open side down in the
    casserole dish, cook it in the microwave, checking it periodically. When soft and indents well,
    set it out and do the other half, let them cool, before using a fork to scrape across the squash in
    side and clean it totally out of the shell and breaking it down into the stringiness like spaghetti,
    and use as spaghetti.

    Question, have you made zucchini lasagna? We tried a recipe of it and did not like it. But, then I
    had zucchini and tried my regular lasagna recipe but just substituted the zucchini in place of the
    noodles and we loved it. Just a thought! Happy cooking.

    How exciting about the squash, and I hope you find a good way to cook the zucchini noodles. I plan on experimenting with that sometime in the near future.
