I've been charting my weekly weight loss in things so I can physically see what I am losing. This week my weight loss was not a big amount (1.5lbs) but I am still doing a happy dance as I am losing weight. emoticon

I've been on SparkPeople for a month now. I'm not really following any specific diet, however I log every morsel that I eat. I can not stress how important logging food is - it is a real eye opener. I also measure everything. Takes a little extra time and it messes up a few extra dishes - it's worth it.

I've also started meal planning. As a family, we plan what we want to eat each week. On Saturday my husband and I shop for food. We buy tons of fresh fruit and vegetables - all the colors of the rainbow. Then I try to prepare 2-3 meals for the week to have on hand in the freezer, ready to go. I can't tell you how wonderful it is to come home and know that dinner just needs to go in the oven and a quick salad can be made. I have time to exercise while dinner reheats.

Here's how I prepare vegetables for vegetable sauce, lasagna, and texmex shepherd's pie:
. This took about an hour, but keep in mind I am making 3 meals for 5 people.
The cooking itself takes about 2 hours. Heres what I put in the shepherd's pie
. You see that there is more veg/beans - I add the meat later.

If you are curious, our menu last week was 3 layered lasagna (layer of meat, a layer of ricotta spinach, and a layer of veg sauce not low cal at all - I built it into my day), tofu veggie stir fry, Tex/Mex shepherd's pie, Mediterranean salad topped with chicken, southwest chicken soup. I built in a leftover day, but the leftovers were taken as lunches

I'm not looking at this as a diet. This is a lifestyle change. Sure, fruits and vegetables can cost more than junk food - but we feel great and we don't feel deprived. Plus - look at all those pretty colors. It looks good.
