Chia Pudding

Just found a recipe for a single serving of Chia Pudding, kind of excited for some healthy comfort food.


1 cup unsweetened, canned coconut milk or unsweetened almond milk
2 tbsp chia seeds
½ tsp vanilla extract

Directions: Stir & wait impatiently for at least 4 hours. Overnight preferred.

I see so many possibilities!!!! Adding a little cocoa powder, some frozen strawberries with the juice.

Would pumpkin be a good or bad idea??

Some healthy, comfort food for a rainy day.

In the evenings I get a healthy fat & carb. This would be something to look forward to.

What healthy treats do you look forward to? I'm always looking for fun ideas. I'm enjoying trying new things.
