Taco Tuesday - kind of.....

Mmmm....I love tacos! Just about all Mexican food really - it is the greatest! But I wanted to make sure I made something diet friendly. So, I boiled up some extra lean ground beef and portioned 2 oz servings. Then I added onions, garlic, corn, black beans, tomatoes and my own homemade taco seasoning. I made enough to eat it about 8 times!

Instead of wrapping it up in a tortilla, I serve it over about 1/2 - 3/4 cup of steamed sweet potato. Incredible taste! And those sweet potatoes are so good for you too. I was topping it with guacamole, but I ran out - booooo!!! This time I grated a few Tbsp of low fat cheddar over it. Have to confess, I prefer the guac!

Sadly, our trip to Mexico was cancelled this spring! We are hoping to go next Feb or March - fingers crossed on that one!

Now I will tuck in to this beautiful lunch. If only I had a Dos Equis........
