Just weighing in on the delicata squash. I have finally decided to face facts and realize that in my diet, it is going to become a dessert because that’s how sweet it is to me. Love it with a few seeds or chopped nuts. (It is even good mashed with a bit of liquid and-wait for it- cocoa powder.) I eat the skin of nearly all squashes except acorn and spaghetti squash.

Sorry, got far afield of fake meats. I’m trying to keep my ratio of Omega‘s in a decent range and that precludes much from the fake vegan categories. I don’t claim I don’t miss some of those things! But I still get a lot of good stuff to eat.

I'll check those out! I am watching my BP but I hope the weight loss will bring it down enough that I won't need to worry too much about sodium.

The goal on my ticker is my goal for the end of the year. I look forward to losing at least another 15 pounds after that but at a slower pace.

The Fall 2020 Forks Over Knives magazine starts out with: Five ways to top delicata squash! I'm going to try every one of them!

Have you tried any of the Loma Linda products? Some of them are kind of high sodium, but their Tuno has 0g of fat, 170mg of sodium and 7g of protein.They also have a ground taco filling with 4g of fat, 180mg of sodium and 6g of protein.

Night, thanks for the book recommendation. I just put it on hold at my local library.

GRAMCRACKER I was used to vegetarian meals when I went vegan so it was less of an adjustment but I relied on cheese to an appalling degree. I kept trying to cut back on cheese but was never able to until I went vegan. I find that I just get too hungry if I don't have protein-rich foods at every meal but maybe if you're healthy you don't need more.

I have generally avoided fake meats but had easy meals a couple of times a week that added variety to my diet.

The goal on my ticker is my goal for the end of the year. I look forward to losing at least another 15 pounds after that but at a slower pace.

Oh my heavens - I love delicata squash! Once roasted, you can eat the skin as well for extra nutrients and fiber.

It's amazing just seeded, sliced into rings, drizzled with olive oil and a little salt.

Oh I am so glad squash season is almost upon us.

NIGHT Ill check out those Boca patties. Ive avoided Boca for the most part because some of their products have milk. I see those do not. Theyd be nice to have on hand for when I just dont want to put together a meal.

I average about 40 g of protein. I might need more as Im 74, but I reached a point I just dont worry about it.

AMANDA when I first went vegan I was lost at meal planning. Everything always revolved around what meat was being served. Now we are happy with a big plate of vegetables with fruit. And of course plenty of the proteins beans, lentils, peas etc.

The Misfits box came yesterday and it included a delicata squash which weve never had. Also some tubers I think are a type of sweet potato. I also think if I planted them theyd be a flower.

So today Ill roast vegetables. Sweet potatoes, russets, beets, the squash and some garlic. Keeping them whole for batch cooking.

Those sound delicious -- thank you!

The amount of protein many people in the US consume is insane. I do think I feel better when I make a bit of an effort to get a good amount though. I rely on theveganrd.com for reliable, evidence-based information on nutrition and she suggests a bit more for vegans and for older people.

I feel you, and am really trying to use Impossible Burgers as a rare treat.
Boca Chick'n patties have 4 grams of fat, and we love to cook them in the oven and then top them with some Frank's hot sauce during the last five minutes or so for a Buffalo patty version.

There's dispute about the amount of protein that Americans need. We just don't get protein deficiency.

An excellent book about the subject examines the history of USDA protein "requirements" and how studies that came up with those numbers were funded by the beef industry. It's called "Proteinaholic" and I was able to get a copy from my local library.

I try to get at least 60 grams every day but it's not hard. I have about at least 4 servings of legumes every day, one of hemp seeds, and one of nuts, as well as the protein in whole grains and veggies. I do get a bit bored with my diet, though, and would like to occasionally have some vegan "fake meat" (as a treat) but my favorites, the sausages, are pretty high in fat and sodium. Has anyone found one that's lower in fat? And/or sodium? Or some other tasty meat alternative?
